Our Story
Grandma's Bakery began as a kitchen table operation in Birnamwood — a small batch of sourdough, a cast-iron Dutch oven, and a conviction that bread should be made the way time allows it.
Today we occupy a modest storefront on Main Street, but the rhythm hasn't changed. We arrive before sunrise. We ferment for 48 hours. We shape every loaf by hand. And we close when the last croissant is gone — which is usually well before the sign flips to closed.
What We Make
Our menu shifts with the season and the grain. What stays constant is the commitment to fermentation, technique, and ingredients we can name by source.
Three rotating starters, each cultivated for over a decade. 48-hour cold ferment in spelt, whole wheat, or our signature white.
Baked Daily
Danish butter, folded seven times over three days. Croissants, pain au chocolat, and seasonal fruit tarts — all from scratch.
Three-Day Process
Single-origin pour-overs and espresso drinks from a local Wisconsin roaster. Oat, almond, and whole milk always available.

Our Philosophy
We don't use improvers, conditioners, or commercial yeast. Our bread rises because we give it time — and time is the one thing fast food can never replicate.
Everything you see on our counters is made in-house, from the butter in the croissant to the salt in the baguette. If we can't say where it came from, it doesn't go into our oven.

We're a small shop with limited seating — come early for the best selection, or stop by in the late afternoon for day-old bread at a reduced price.
